Weekend Recap

Happy Monday, everyone! I can't believe the weekend is over and we're already back at work. Weekends seem to get shorter and shorter. And another thing I don't understand is why it's SO hard to get up for work at 6:30am, but when I wake up at that time during the weekend it's so easy. Someone please explain it to me.

We had an awesome dinner with our good friends, Ryan & Carrie, on Friday night and they made a delicious salad (grilled peaches over arugula with goat cheese and prosciutto) and homemade Spaghetti. I'm going to have to make that salad soon as I'm already craving it. Here's the recipe for the salad:

Ingredients

  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 3 peaches, pitted and each cut into 6 wedges
  • Cooking spray
  • 1 tablespoon extravirgin olive oil
  • 1/8 teaspoon freshly ground black pepper
  • Dash of kosher salt
  • 10 cup trimmed arugula (about 10 ounces)
  • 2 ounces thinly sliced prosciutto, cut into 1/4-inch strips
  • 2 tablespoons crumbled goat cheese

Preparation

1. Bring vinegar to a boil in a small saucepan over medium-high heat. Reduce heat, and simmer until vinegar is reduced to 2 tablespoons (about 2 minutes). Remove from heat; stir in honey. Cool to room temperature.
2. Prepare grill to high heat.
3. Place peach wedges on grill rack coated with cooking spray; grill 30 seconds on each side or until grill marks appear but peaches are still firm. Remove from grill; set aside.
4. Combine oil, pepper, and salt in a large bowl, stirring with a whisk. Add arugula, tossing gently to coat. Arrange arugula mixture on a platter. Top with peach wedges and prosciutto. Drizzle with balsamic syrup; sprinkle with cheese.

Saturday was pretty low key. Bubbly Creek Bluegrass Band was playing at the new Whole Foods in Lincoln Park so I stopped by there to see them. My dad, my brother and husband are all in the band and then 2 other awesome musicians. I love bluegrass!

On Sunday Andy and I went to my parent's house and Andy made the family breakfast. My mom and I then went to the fabric store and I got fabric to make curtains for our kitchen window. I'll show a picture as soon as it's finished. I'm very excited! Meanwhile, Andy took a part an antique kitchen hutch and we're going to use the wood shelves to create floating shelves in our kitchen. Also, a work in progress, but will show in a later post. We made our way back to the city in the afternoon and enjoyed the sunshine on our porch.

 The Air & Water show was also this weekend. We could see the planes from our place and at work on Friday I snapped this picture of the fire truck boat on Lake Michigan. There's always something going on in Chicago!
